For the past few mornings I’ve been waking up to sunlight spilling through my windows, bringing warmth and light to every corner of my apartment.
That can only mean one thing – spring is finally here!
As I’ve been confined to my apartment for over a week now (thanks, coronavirus!) I decided to bring the sunshine inside with a selection of my favourite spring recipes.
Ready for a little warm-weather inspiration?
Have you ever tried pickled red onions? They are out of this world.
In fact, everything about these Green Goddess Farmers Market Tacos is mind-blowing. From the gently-cooked asparagus stalks to a tangy avocado-lime sauce all wrapped up in a warm tortilla, you won’t be able to stop at just one.
I love munching on salads in the springtime, but a chunk of iceberg lettuce topped with some sorry-looking tomatoes and cucumber just doesn’t do it for me.
Luckily, this Corn and Grilled Zucchini Salad exists. Fresh vegetables roasted in the oven, nestled in a bed of rocket and drizzled with olive oil – what more could you want?
A healthier alternative to a traditional spring roll, these Spring Roll Bowls are packed with Asian-inspired flavours and topped with a garlic-lime sauce that is out of this world.
Dig out the noodles from the back of your pantry and get cooking!
What could be better than a chilled, fresh pasta salad on a sunny spring day?
There’s something about this Macaroni Salad that really takes me back to my childhood. Back then the recipe was based around chicken and avocado, but this vegan version is even better!
One of my favourite spring traditions is strawberry-picking at Hewitt’s Farm, and I’m holding out hope that we’ll be able to do it this year!
The first thing I’ll be making with my abundance of strawberries is this Strawberry Spinach Salad loaded with greens, avocado and ruby-red berries. It’s the perfect way to kick off the warmer months!
I have a soft spot for soft tacos, and these Fresh Fish Tacos are no exception.
The recipe can be simplified down to the bare bones and still tastes incredible – you really can’t go wrong with a tangy sauce, high-quality fish and the citrus burst of fresh lime!
A healthier alternative to a traditional potato salad, this No-Mayo Potato Salad makes use of fresh herbs and high-quality olive oil to create a side dish so spectacular that I’m tempted to make it the main course!
This Epic Poke Bowl just screams springtime.
It’s fresh, healthy and able to be tossed together in just a few minutes – perfect for those warm evenings when you just can’t be bothered to cook!
I’ll be stepping slightly out of my comfort zone with these Chickpea Pancakes, but you can’t deny that they look delicious.
Served with a tangy sauce and roasted seasonal vegetables, this just might become my go-to lunch throughout this spell of sunny weather.
Remember when I said that my abundance of strawberries would be reserved for a seasonal spring salad?
After spotting this recipe for Strawberry Banana Bread, I think my priorities have changed. Then again, why not have both?
I recently tried by CHLOE‘s Kale Caeser Salad and was blown away by how incredibly delicious it was. But at £10 a bowl, it definitely isn’t the most affordable option.
Luckily, this recipe by Crowded Kitchen is just as delicious without the price tag!
It can be a little tricky to put together a nutritious breakfast in the warmer months – regular oatmeal is too warming, while a bowl of fruit doesn’t exactly keep me full.
Thankfully, this recipe for Lemon Overnight Oats is a complete lifesaver! It can be prepared the night before and kept in the fridge, providing you with a chilled and zesty start to your day.
Of course, I had to include one of my own recipes. I’m so addicted to this crisp, vibrant Seasonal Spring Salad that I even make a variation to enjoy in the cooler months!
With crunchy radishes and a tangy dressing, you’ll wish it was spring all year round.
Don’t be fooled by the name – these Summer Rolls are perfect for springtime.
I’ve always been a little intimidated at the thought of making my own summer rolls, but the process couldn’t be simpler. Give it a try and see for yourself!
How cute are these little pink Miso Butter Roasted Radishes?!
They have to be one of my favourite seasonal vegetables, and I can’t wait to enjoy them in the warm spring sunshine on my rooftop. They’re almost too pretty to eat!
